Retains the moisture of a food product. Suppresses sucrose crystallization; it helps to improve softness and pliability & prevents the product from graining. Sugar substitute. Carrier or solvent in pharmaceutical preparations, flavours & dental products. Humidifier (to protect from drying out) & emulsifier (to stabilize emulsions & suspensions) in cosmetic products.
